Samosas are a popular snack in South Asian cuisine, consisting of a crispy, fried pastry filled with a savory mixture of spiced potatoes, peas, and sometimes meat. Here's a recipe for making vegetable samosas at home:





Ingredients:


2 cups all-purpose flour


1/2 teaspoon salt

1/4 cup vegetable oil

1/2 cup water

2 large potatoes, peeled and diced

1/2 cup green peas

1/2 onion, diced

1 green chili, chopped

1/2 teaspoon cumin seeds

1/2 teaspoon coriander powder

1/2 teaspoon garam masala

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder

Salt, to taste

Oil, for deep frying

Instructions:


In a large mixing bowl, combine the flour and salt. Add the oil and mix well. Gradually add the water and knead the dough until it becomes smooth and pliable. Cover the dough with a damp cloth and let it rest for at least 30 minutes.


Boil the diced potatoes until they are soft, then drain and mash them.


In a pan, heat some oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Add the diced onion and green chili and sauté until the onion becomes translucent.


Add the mashed potatoes, green peas, coriander powder, garam masala, turmeric powder, red chili powder, and salt to taste. Mix well and cook for 2-3 minutes. Remove from heat and let the filling cool.


Divide the dough into small portions and roll each portion into a thin circle.


Cut the circle in half and form a cone shape by bringing the two straight edges together and sealing them with water.


Fill the cone with 2-3 tablespoons of the potato filling and seal the open edge of the cone with water.


Heat oil in a deep pan over medium-high heat. Once the oil is hot, add the samosas and fry them until they turn golden brown and crispy.


Remove the samosas from the oil and place them on a paper towel to absorb the excess oil.


Serve the samosas hot with tamarind chutney or mint chutney.

Repeat the process with the remaining dough and filling until all the samosas are made.


Once all the samosas are fried, you can store them in an airtight container in the refrigerator for up to 3 days. To reheat, place the samosas in a preheated oven at 350°F for 10-12 minutes or until they are heated through and crispy.


Optional: You can also add other ingredients to the filling like chopped carrots, green beans, or minced meat. You can adjust the spices according to your taste preference.
